Carrot Walnut Cake

LAST MINUTE HEALTHY CAKE
(aka Carrot Walnut Cake)

Over the past few weeks, I have created a lot of cupcakes using healthy ingredients (e.g. applesauce vs oil).

Tonight I noticed I had too many carrot left over after juicing. What to do, what to do because you can't just eat a carrot, that would be silly! Put it in a cake! Of course!!

I mixed a vanilla flavored cake from Duncan Hines (they were on sale 5 for $3.00!) with three eggs, 1/2 cup unsweetened applesauce, 1/2 cup water, teaspoon each of nutmeg and ground clove, 1 1/2 teaspoons cinnamon, 2 teaspoons honey. I peeled and shredded two carrots and one apple and mixed with the batter. I then added 1 cup of crushed walnuts. Mix well.

I buttered and floured a round tension pan then powdered again (lightly) with unsweetened cocoa powder. Bake at 350 degrees for 25 minutes or until a toothpick comes out clean.

Meanwhile, I made the icing.
Using left over vanilla icing, (that I melted a little in the microwave) I added 2 teaspoons of maple syrup, 1/2 teaspoon of each spice (cinnamon, nutmeg, ground clove). Mix well and ice cake once completely cooled. Enjoy!!
